Hummus finds its origin in the Middle East, it is a savory dip/spread that can be served with a variety of food like Pitta chips, Tortilla chips, Pretzels, Naan, or even just Warm Flatbread. They say Hummus has a lot of benefits. It is a great source of plant-based protein, calcium, Iron, Folate, Zinc, and B and E vitamins. It also provides Fibre for gut health and Healthy fats. I was introduced to this amazing dish in Egypt around 4 years back and have not stopped consuming it since. Combine this with beets (my favorite vegetable ) its a winning combination for me.

The Recipe

Let’s start cooking! Take 2 medium-sized Beets, clean trim, and lightly spray them with Olive Oil. Wrap it in foil and roast it for 40 to 60 mins or until they are cooked. Run it under cold water, peel the skin, chop, and keep aside.

In a food processer pulse the beets, chickpeas ( 1 and a half cups of boiled ones), roasted clove of Garlic,3 spoons full of Tahini, 1 teaspoon of roasted cumin, Himalayan salt as per taste, 3 tablespoons of water, some parsley (optional ) black pepper, and fresh lemon juice to taste. Pulse until super creamy. Serve with your choice of food!
